  • 5 dried guajillo chilies
  • 3 dried ancho chilies
  • 2 cups water
  • 1 small onion chopped
  • 4 garlic cloves minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons tomato paste
  • 1 tablespoon sugar

Instructions
 

Prepare the Chilies:

  • Take out the ancho and guajillo peppers’ stems and seeds.
  • Place the chilies in a medium saucepan with 2 cups of water.
  • Bring to a boil, then reduce the heat and simmer for about 15 minutes until the chilies are soft.

Blend the Chilies:

  • Transfer the softened chilies and the simmering water to a blender.
  • Add the chopped onion and minced garlic.
